Healthy Roasted Potatoes
“Choose King Edward or Maris Piper potatoes to get the best results when making this lower-fat roastie recipe – crisp on the outside, fluffy on the inside.”
- 12 medium potatoes, King Edward or Maris Piper
- 1 pint of vegetable stock
- 2 teaspoons of olive oil
- Preheat oven to 400°F. Peel the potatoes and cut each one into 3 pieces so they are roughly the same size. Place them in a large roasting tin and pour in the vegetable stock so it reaches half way up the side of the potatoes. Brush the top of each potato with a little oil then season with salt and freshly ground black pepper.
- Place in the oven for 1 hour until the potatoes are cooked through but browned and crunchy on top.
This dish would be great with a lean roast or whichever traditional protein dish your family enjoys on Christmas.
