Paleo Pancake Recipe
This hearty recipe uses cashews in place of the typical flour needed for pancakes. Simply grind cashews into a powder or cashew butter. You can grind your own at home or most wholefood stores have self-serve grinders that are quick and easy to use.
What You’ll Need:
½ cup cashew butter
½ cup unsweetened applesauce
2 eggs
¼ tsp of cinnamon
¼ tsp of vanillia
Mix together in bowl and cook on skillet as you would normal pancakes.
Hint: pre-packaged natural and organic applesauce is available in (½ cup) single-serve cups with the foil pull tops. These are convenient to keep in your cabinet without refrigeration.
Syrup alternative: try using Agave Nectar instead of syrup for low glycemic insulin spikes in your blood glucose levels. There are many new maple flavored agaves on the market that really taste good.
